Our outstanding Cheddar is the best of the best, winner of countless awards over the years. We still make it to the recipe our grandmother Ivy perfected a century ago, and dedicate the same care and attention she gave it. Under the guidance of our Master Grader, we select the finest Cheddar and age it for up to 18 months under wood, at the same temperature as Ivy’s original stone storage barn.
Rich and complex, it is slightly sweet, nutty and rounded with deep undertones that leave that all-important tang in the roof of the mouth. Along with this comes a firm texture that crumbles under the knife but is creamy in the mouth, as well as the slight crunch of a true vintage Cheddar.

Serve Ivy’s Reserve as our grandmother Ivy did: with fruit or chutneys and pickles, along with homebaked bread. Sourdough crackers will also bring out its natural sweetness, and it’s perfectly complemented by a full-bodied red wine or a Somerset cider.
